Moelleux or mi-cuit au chocolat inspired by Michel Bras



Ingredients required


For a smooth, creamy, crunchy cake, you need :

  • 200g dark chocolate

  • 200g of salted butter

  • 100g rapadura or muscovado sugar or coconut or palm sugar...

  • 4 whole eggs and 4 yolks

  • 60g of flour



The preparation

  • Melt the chocolate and butter in a bain-marie.

  • Whisk the eggs with the sugar.

  • When the butter and chocolate mixture is homogeneous and slightly cooled, combine it with the whitened eggs and sugar.

  • Add the flour and mix.

  • You can put this mixture in ramekins or in lined circles on an ovenproof tray with baking paper underneath.

Tips: Your moelleux should be kept in the refrigerator for at least 3 hours.

Baking time: Baking time is 7 minutes in an oven at 200 degrees.


Tips: If you have chosen to bake in circles, a few minutes after removing from the oven, use a small thin knife to cut around the cake to help unmould it.


You can accompany your cake with a scoop of vanilla ice cream, a custard, a passion fruit or raspberry coulis...
